

Another Grandma Mansur special and a firm family favorite for BBQs and summer gatherings. This recipe was found in a Wisconsin farm magazine.

Ingredients:
6 medium potatoes 2 c shredded chedder cheese 1/4 c butter 1 1/2 c sour cream 1/3 c finely chopped green onion 1 tsp salt 1/4 tsp pepper 2 Tbl butter (extra) Paprika

Cook potatoes in skin; cool.
Tip: Cook until skewer just goes through, you want them still firm enough to grate. Cook them too long and you will have mush.

When cool, peel and grate coarsely.

In a saucepan over low heat, combine 2 cups cheese and 1/4 cup butter. Stir occasionally until almost melted.

Remove from heat and blend in sour cream, onion and seasonings.
Fold in potatoes.

Turn into a greased 2 quart casserole dish. Dot with 2 Tbl of butter and sprinkle with paprika.
Tip: This recipe freezes well so make a double batch and pop one lot in the freezer at this stage for another dinner.
Bake uncovered in a 180C (350F) oven for 30 minutes.
