The Perfect Steak
How to cook the perfect steak.
How to cook the perfect steak.
1
Step 1 of 21How to cook the perfect steak. Some beautiful steaks from Tasmania here. What I'm going to do, I've just left them to come up towards room temperature so they're not really fresh cold.
2
Step 2 of 21I've just put some salt, Mario's salt, some pepper and a bit of oil on the plate.
3
Step 3 of 21I've just put some salt, Mario's salt, some pepper and a bit of oil on the plate.
4
Step 4 of 21We'll do this. So season all the steaks.
5
Step 5 of 21If I just put two on, on the flame.
6
Step 6 of 21But I'm just going to brush them like this because I find, as you do that, the initial contact of the protein in the meat with the grill, it stops it from sticking and also you get this little lick of flame.
7
Step 7 of 21Oh, actually, probably, I'm a chef. And I've burnt myself and I've cut myself.
8
Step 8 of 21So I suggest, I'll just show you how not to do it. Take some tongs and then flip.
9
Step 9 of 21And that should do it. You can see, it's just the oil that I've covered the steak and it's started to drip onto the flames.
10
Step 10 of 21I'm getting, the flames are just licking the meat and that will give you a beautiful chargrilled flavour.
11
Step 11 of 21I've got a good amount of heat there. I'm going to flip these steaks every 20 to 30 seconds.
12
Step 12 of 21So by continuing to turn it, all I'm doing is pulsing the heat through the meat.
13
Step 13 of 21So this way you get a fantastic crust, which is really important for steak because it makes it juicy.
14
Step 14 of 21Chewing makes food juicy. And that's so easy.
15
Step 15 of 21I'm going to leave these to rest for probably five minutes. OK, so these are now ready.
16
Step 16 of 21They've rested. I've seasoned them before, but I'm going to slice them and then season them after.
17
Step 17 of 21Because it just gives a better distribution of the salt and pepper on the steak.
18
Step 18 of 21I've just got a little bit of rosemary oil here. I'm just going to drip a little bit over it.
19
Step 19 of 21Some more pepper. Just some Murray River salt.
20
Step 20 of 21And that is it. How juicy? It smells fantastic.
21
Step 21 of 21I want to be alone.
