The reason we do a two-part pour, it helps compact the head. Start with beer-clean glassware.

Your grip needs to be in the bottom third of the glass, the bar person's third as it's known.

Hold your glass at a 30-degree tilt. You want to get in around 25 millimetres from the base of the tap.

Pour the beer down the inside of the glass. This is where it alters from the one-part pour.

When the glass is half full, turn off the tap and allow your beer to settle.

This allows the head to compact. After a few seconds, it's time to get pouring again.

At the same tilt as before, open the tap fully and straighten your glass as you go.

Allow the head to just peep over the rim of the glass. Turn off the tap smartly.

So you're aiming for a head that's 10 to 15 millimetres thick. Again, only working in the bar person's third.

Move your glass across to your client with any branding facing out.
