Start with one plate which, held in the left hand. Position your fingers on the bottom edge opened to assist supporting the second plate.
The second plate tucks in right next and then it's supported with the fingers of your left hand. Your three fingers support the second plate.
The third plate is pretty simple - it balances from your forearm to the edge of the second plate which just sits like you see on video.
The fourth plate is in your right hand. Try walking around with plates to get a feel for the balance.
Repeat the actions several times to get used to this position of the plates.
Practice this five minutes a day you'll get this and it'll make your job so much easier because you use it for busing as well when you're picking up dirty dishes. It's a technique that flows into all aspects of table service.
